Anyone who hates buying a rotisserie chicken, only to eat it one day and throw the rest away. I absolutely hate wasting food with a passion, and when I buy an Item I always try my best to use it every way that I can!
My favorite meals to make with a rotisserie chicken are between the following
- Chicken BBQ Pizza
- Southwestern Chicken Salad
- Taco Soup

Shopping List
- Rotisserie Chicken
- 2 Thin Premade Pizza Crusts
- 1 Red Onion
- Your Choice of Favorite BBQ Sauce (My preferred choice for this pizza is the “Sweet Baby Ray’s Sweet ‘n Spicy”)
- (1) 8 OZ Bag of Mozzarella Cheese (Shredded)
- Dried or Fresh Parsley
Directions
- Preheat oven to 350 degrees
- Thinly shred about a half cup of rotisserie chicken (you could do more depending on how much chicken you would like on your pizza
- Thinly chop red onion into thin slivers
- Place premade pizza crust onto a pizza cooking sheet or cutting board if you plan on cooking directly on the rack.
- Start by applying a generous amount of BBQ sauce and spreading it around with a silicone brush, or spoon in a circle leaving less than half inch of crust around the perimeter of the pizza.
- Then apply a thin even layer of Mozzarella cheese on top of the covering all the BBQ Sauce
- Apply thinly sliced red onion throughout the pizza (amount to your liking)
- Apply shredded chicken throughout (Amount to your liking)
- Sprinkle dried or fresh parsley throughout the topping of the pizza
- Place in the oven for approximately 10 min. Depending on how your oven bakes – (ready when cheese is melted, and onions have received a slight baked coating) (8 to 10 min)
