Papa Joe’s Candy Burgers

There is no better memory than having my dad grilling up these burgers that he spent many years perfecting! Anyone and everyone that knows my dad, always requests these burgers when they come to visit. It’s almost as if it is his signature meal.

I thought that there would be no better day than today to release his specialty burgers than a day of celebration of all the amazing Father’s out there. Happy Father’s Day to all Father’s, and Father figures that fill the shoes, and carry the weight of love, and pride for their son’s and daughter’s.

Shopping list for the burgers

  • Brioche Hamburger Buns
  • Pepper Jack Cheese
  • 3 LB Ground Beef
  • ½ Cup of Dark Brown Sugar
  • ½ Cup (heaping) Plain Bread Crumbs
  • 1 Large Egg
  • 1 TSP Minced Garlic
  • ½ TSP Onion Powder
  • ½ TSP Seasoning Salt
  • ½ TSP Ground Pepper
  • Arugula Salad 
  • Tomatoes

Jalapeno Bacon Jam Shopping List

  • 1 Medium Sweet Onion
  • 1 Large Jalapeno
  • 1 Cup Dark Brown Sugar
  • 1 TSP Minced Garlic
  • 3 TBSP Pure Maple Syrup
  • 2 TBSP Honey
  • 4 TBSP Unsalted Butter
  • 2 TBSP Whole Grain Old Style Mustard
  • 3 slices of bacon

Garlic Spread Shopping List

  • 4 Whole garlic bulbs
  • Olive Oil  (Drizzled)
  • Salt 
  • Pepper

Jalapeno Bacon Jam Directions

  1. Start by thinly dicing the 1 medium sized sweet onion, and one large jalapeno
  2. Cook three pieces of bacon separately, when cooled thinly dice bacon
  3. Use a small saucepan and start by melting butter in the pan on medium to high heat, followed by adding/mixing in your pure maple syrup, honey, minced garlic, brown sugar, whole grain old style mustard, thinly diced sweet onion, bacon, and jalapeno.
  4. Bring to a boil, and to a liquid form. Once it reaches the liquid consistency, and slightly boil, turn the burner off, and place to the side. 
  5. Once cool, place in a separate bowl and place in the fridge to slightly chill and thicken

Prepare garlic spread

  1. Preheat oven to 350 degrees
  2. Take four whole garlic bulbs and cut the top and bottom off, and peel excess shell/case off.
  3. Place four trimmed bulbs standing up in a large square sheet of tinfoil. 
  4. Drizzle good amount of olive oil, dash of salt and pepper
  5. Fold up tin foil to keep all oil from leaking out and making a teardrop out of the tin foil.
  6. Place in the oven for 30 minutes.
  7. After 30 remove from the oven and safely open the foil to allow cloves to begin to cool
  8. When they have come to a medium temperature begin taking the cloves and squeezing the garlic into a separate dish (the garlic cloves should easily slide out/ or moosh out of the casing of the clove)
  9. Begin mashing with a fork making it chunky sauce like texture
  10. Place to the side, you will need in later direction to prep the burger

Making of the Burger

  1. Take a large mixing bowl, and your 3 lbs of ground beef (You will only use ¾ of the 3 lbs ground beef) 
  2. In the bowl of your ground beef and add your dark brown sugar, plain bread crumbs, egg, minced garlic, onion powder, seasoning salt, and ground pepper.
  3. Mix with your hands, and start to separate them into 6 large balls. 
  4. After separating, begin making them into large discs and placing into a large pan that you have a lid for on medium to high heat. 
  5. Place the lid on, continuously checking the color, once the top of the burger turns a slight brown color, flip and place the lid back on. 
  6. Once the burger appears to be almost cooked (or to your liking of rare/medium/well done), remove the lid and let the liquid in the pan begin to caramelize and flip after a minute, and now place two slices of pepper jack cheese (or cheese of your choice) per burger and remove after it becomes slightly melted.

Prepping the burger

  1. Take garlic spread and thinly spread it on top and bottom of the Brioche hamburger buns and place in a pan face down with low to medium heat to allow it to become slightly toasted
  2. Start by placing your tomato slices on the bottom layer of the bun
  3. Add your burger with your cheese, followed by your arugula salad mix
  4. Now remove your Jalapeno bacon jam from the fridge and thoroughly mix. If you let it sit for to long and the butter is becoming solid on the top (place in the microwave for 30 seconds and mix it thoroughly) 
  5. Drizzle a good amount of the jam on top of the arugula salad adding the thicker components to the jam as well.
  6. Now place the top of the bun and ready to serve.
